Wow. My new restaurant has taken over my life. I'm not really teaching right now. I am just living and breathing this place. It's going to be amazing and it's incredibly intense. I get why, and I think once we get open, we'll be an extremely cohesive crew. Hell, last night, we all did dishes because the dishwasher walked out.
So, I know I haven't told you any awesome stories, but I will. Such as how I came to tell the executive chef not just for my restaurant, but for all the corporation and a man who has twice won the James Beard award (kind of an Oscar for chefs) about my fantastic heiney.
